~ Basil gnocchi alla norma ~
Today I want to share with you an Easy, tasty and impressive first course.
A recipe that we all know well, that I’ve cooked many and many times, which today I propose to you in this way…
INGREDIENTS (for 4 people):
For the gnocchi:
- basil
- 4 large potatoes
- 00 flour a/r
- 1 egg
- salt
For the sauce:
- 1 eggplant
- seed oil
- cherry tomatoes 100gr
- tomato sauce 100gr
- oil
- salt
- chili
METHOD:
Boil in salted water the potatoes with their skins . Drain and let it cool slightly and peel while still hot (the peel will come off in a flash). Mash them in a boul and leave to cool. Then add salt, a glass of flour and an egg and knead. In a blender, chop 20-30 basil leaves, leaving them rather coarse. Add it to the dough and mix well. The dough should be soft, but not sticky (in case add flour a/r) to allow for handling. Shape into sausages and cut the gnocchi with the help of a knife. Put them in the fridge for 30 minutes.
In the meantime, wash the datterino tomatoes and leave them whole. Wash the aubergine, peel it and cut the peel into strips. Fry them in seed oil. Cut the inside of the eggplant into cubes and fry them too. Salt everything and set aside. Put the pasta water on. Now prepare the sauce by tossing the datterino tomatoes and the tomato sauce in a pan with a drizzle of oil, salt and chilli. It will take a few minutes, just the time for the tomatoes to soften. Boil the gnocchi in salted water until they come to the surface and make up your own dish. Enjoy your meal!
