~ Bucatini with zucchini cream, pecorino cheese and mocetta ~
This is the pasta format you chose in the quiz on my Instagram page. I admit that I’ve always cooked bucatini in an easy way, with tomato sauce anda grated Parmesan, but today I was inspired by a song, or rather by an italian singer and this is the result.
I decided that for the titles of this week’s dishes I’m gong to be inspired by the singers of Sanremo song contest I liked the most. The first is Madame with her wonderful song “Voce”, so I propose to you my voice.
INGREDIENTS:
- two zucchini
- shallot
- mint
- salt
- oil
- bucatini
- mocetta
- pecorino cheese
METHOD:
Cut the courgettes into cubes and stew them in a pot for 10-15 minutes with the shallot, mint and salt. Once cooked (they must be flaked) blend them with the mixer, adding a little extra virgin olive oil until you get a creamy consistency. Transfer half of the cream into a pan and set the other aside. Then, cook the bucatini, leaving them “al dente”. Drain them into the pan with the cream and sauté for a few minutes, adding its cooking water if necessary and a generous grating of pecorino cheese. Cut a couple of slices of mocetta with a knife, quite thin and make them into strips. Now you can serve, finishing the plate with the zucchini cream, a sprinkling of pecorino cheese and mocetta … Good start!
TIPS: if you don’t find the mocetta, or you don’t like it, you can replace it with speck or crispy bacon.
